HOW TO BREW

​HOW TO BREW BLACK TEA

  1. Take one teaspoon of black tea per person.
  2. Add the tea to a teapot or put it in a tea infuser and add it to freshly drawn boiling water.
  3. Infuse the tea for AT LEAST 3 minutes - preferably 4.  The best flavours of leaf tea take this long to steep into your tea liquor.
  4. Relax and rebalance for a while, make the most of the ritual.
  5. Pour from the pot (if you made it in a pot) then add milk and sugar to taste.

NOTE:

The biggest problems in tea brewing are:
​
  • Bad tea
  • Not using freshly drawn boiled water (reboiled water from last night's kettle will not do). 
  • Infusing for seconds rather than minutes.
  • Adding milk too soon to a boiling hot cup.  The water is too hot for the milk and spoils the proteins in the milk, leaving a nasty "UHT" taste in your tea.
  • Too much sugar.  Good tea doesn't need it.​

HOW TO BREW ICED TEA

  1. Make some hot tea - black or green (see above)
  2. Set aside the liquor and allow it to cool.  If you put it in the fridge, this is OK, but you will often get a cloudy tea.  This is normal and will not affect its flavour.
  3. Decide if you want to flavour your tea.  Some ideas are below.  Also, decide if you want to sweeten your tea.  If you are looking for sweeter tea, you can use a little sugar (although we prefer a squeeze of juice).
  4. Find a tall glass and fill it with ice.
  5. Mix your iced tea, sweetener and any flavours like a squeeze of lemon, dash of berry juice, peach juice or so on. 
  6. Garnish with lemon or something else you like!  Mint is lovely with green tea iced tea blends.

NOTE:

The biggest problems in iced tea are:
​
  • Bad tea
  • Weak tea - Brew your initial infusion really well
  • Too little ice - this means the ice melts and dilutes the drink
  • Not enough sunshine to enjoy it.

  1. Take one teaspoon of green tea per person.
  2. Add the tea to a teapot or put it in a tea infuser and add it to freshly drawn boiling water that you have allowed to cool to just under boiling.
  3. Infuse the tea for AT LEAST 2 minutes or to taste.  The best flavours of leaf tea take this long to steep into your tea liquor.
  4. Relax and rebalance for a while, savour this ritual.
  5. Pour from the pot (if you made it in a pot) into your favourite cup.

NOTE: 
​

The biggest problems in tea brewing are:
​
  • Bad tea
  • Using boiling water rather than 95 degree water. Green tea is a little more delicate than black tea and infuses better at this temperature.
  • Infusing for seconds rather than minutes.  Again the true flavour of the tea comes with a longer infusion​
